And they are a cinch to make! Our GF AP Flour Blend creates the quintessential "Pudd" without the gluten, so everyone can enjoy them. They can even be made ahead, frozen in baggies and reheated to serve as a unique vessel for your own delicious fillings for your next hors d'oeuvres party!
Makes 12 servings
Ingredients
- 4 large Eggs
- 1 1/2 cups Whole Milk
- 1/2 teaspoon Salt
- 1 1/4 cups Éban's Bakehouse GF AP Flour Blend
- 2 ounces Vegetable Oil (with high smoke point like canola) or Beef Drippings
Directions
- In a blender, combine eggs, milk, salt and flour and blend until well combined. Let rest while preparing the pan.
- Preheat oven to 425 degrees Fahrenheit.
- Place 1 teaspoon of oil or beef drippings into each well of a 12-well muffin pan and put the pan into the oven until the oil is very hot, almost smoking.
- Take the pan out of the oven and immediately pour batter 3/4 full into each well (it should sizzle) and immediately put back in oven.
- Bake Yorkshire puddings until well-risen, deep golden brown and crispy, about 15-20 minutes. Do NOT open the oven door while baking-they could collapse.
- Enjoy immediately while hot with your favorite roast or allow to cool completely and freeze for another time and use.
