Peanut Butter Cookie Parfait

Need dessert now? Whether it’s to satisfy a late night sweet craving or to end a fine meal, our Peanut Butter Parfait is so quick and easy it takes more time to eat it than to make it (if’n you go with prepared pudding)!

Ingredients 
  • 2 Éban’s Bakehouse Peanut Butter cookies 
  • 1 each Vanilla Pudding Cup (or you can make homemade pudding if you have the time!)
  • 1 each Chocolate Pudding Cup (I like to layer each parfait with half vanilla and half chocolate for multi layers of flavor)
  • ½ cup salted peanuts, divided 
  • Whipped Cream
Method
  1. Cut two triangle wedges from the cookies (for garnish) then crumble the remaining cookies into nice-sized chunky crumbles
  2. Layer the bottom of two dessert glasses (I used 4 oz mason jars) with ½ of the crumbles, divided
  3. Spoon half of the vanilla pudding into each glass then add the remaining cookie crumbles
  4. Spoon half of the chocolate pudding into each glass for the next layer 
  5. Top each parfait with whipped cream, peanuts and a wedge of cookie
  6. Enjoy immediately

Notes

  • As with most of the recipes we share, we encourage you to make any recipe your own by adding or substituting ingredients for what you love and what suits your lifestyle. For example: use any flavor pudding you like! Butterscotch or Dark Chocolate would be delicious!
  • Add a drizzle of chocolate syrup and/or chocolate shavings or sprinkles before serving for more chocolate flavor if you prefer
