Meatloaf

This is a great Meatloaf recipe that’s quick and easy to make and is sure to be a family favorite. By using gluten-free breadcrumbs, you don’t have to make a special meal for the gluten-intolerant eater(s)—the whole dish can be enjoyed by all and the chef only has to make one recipe!

Makes 6 servings

Meatloaf Ingredients

  • 2 lbs ground beef, 85/15
  • 1 small onion, finely chopped
  • 1 small jalapeño, seeded and finely chopped (optional)
  • 1 tablespoon olive oil
  • 2 large eggs
  • 3 garlic cloves, minced
  • 1 tablespoon ketchup
  • 1 tablespoon Worcestershire sauce
  • 3 tablespoons fresh parsley, finely chopped
  • 1 ½ cups Oat breadcrumbs
  • 1/3 cup milk
  • 2 teaspoons salt or to taste
  • 2 teaspoons Italian seasoning
  • ½ teaspoon ground black pepper
  • ½ teaspoon ground paprika

Method

    1. Preheat oven to 350 degrees. In a large mixing bowl, break up ground beef and set aside.
    2. In small sauté pan, add olive oil and sauté onions and jalapeños until softened.
    3. Add onions and jalapeños to ground beef. Add remaining ingredients and mix well.
    4. Form meatloaf into pan and place on center rack in oven. Note: You can bake meatloaf in a loaf pan or you can form into an oval and bake in a 9x13 baking dish. I find in a baking dish you get crispier sides.
    5. About halfway through baking, spread half of the glaze on top of the meatloaf and continue baking. Ten minutes before you pull the meatloaf out of the oven, spread the rest of the glaze on meatloaf and return to the oven to finish cooking. Meatloaf is ready when a meat thermometer inserted in the middle of the meatloaf reads 165 degrees. Let rest 10 minutes before slicing.

     

    Meatloaf Glaze Ingredients

    • 3/4 cup ketchup
    • 2 tablespoons lemon juice
    • 3 tablespoons cane sugar
    • 1 teaspoon garlic powder
    • ½ teaspoon onion powder
    • ½ teaspoon ground black pepper
    • ¼ teaspoon salt

     Method

    1. Add all ingredients to a small sauce pan and bring to a simmer, stirring to dissolve.
    2. Remove from heat and cover meatloaf with glaze as directed in above recipe.
